you don't have to use mono-grade oils, a multi grade often gives better protection get a recommendation from your chosen oil company. if you have multiple vehicles and equipment it is possible these days to rationalise down to 3 or 4 oils instead of 7 or ten just ask them for a recommendation.
as for a grease i recommend a red and tacky or 3% black moly (molybdenum disulphide) in ngli grade2 as a good general purpose grease (not for disc brake wheel bearings must use high temp bearing for that)
I starting to feel bad with all the questions, but I really don’t want to do anything that will hurt the machine. I can’t find anything in my manuals about what hydraulic oil specs should be any recommendations? Also is there a specific manual for the dozer?
There are three main items of documentation for your tractor: operator's manual, parts catalog, and serviceman's reference (how to use it, what it's made of, and how to fix it). There are also sales brochures and attachment documentation (example: a blade and hydraulic control to operate said blade are attachments so are described in different documents). The main thing is to find the documents having a range that pertains to your serial number, since Cat frequently updated parts during the lifetime of a model so the correct serial number range documents are important. A good place to look is eBay - manuals come up for sale on there frequently. You can also get reprints from Cat for hard-to-find manuals. You can get cheap photocopies also that theoretically would be disposable in the shop but I haven't found that they're good enough even for that.

someone wise once said the only stupid questions are the ones never asked.jensales is another source for manuals most of theirs are photocopies of originals or reprints. this is part of the problem a copy is always worse than the original its just the way it is.so a copy of a copy can be almost useless. but still better than nothing.most oil companies have a product selector on their website or a smartphone app some have both. they nearly all have a tech advice line.as for hydrualic oil i personally use textrans tdh which is a caltex(chevron) product you can also use delo gold ultra 15w-40 which is the recommend engine oil. personally a engine oil in the hydraulics not my choice. cat specify non anti wear oils in there hydraulics and trans of these old girls.i have taken pity on you heres the reconmendation.

Where would I be able to purchase the appropriate gauges? Only my temp gauge works, the fuel pressure is stuck all the way to the right same for the oil pressure.
try your local dealer. they may be able to help you. florin tractor if your in the states. in aus you can try tillys crawler parts never know what they have. also try pual moore earthmoving spares also at toowoomba.
a guage service may be able to help you and rebuild them if you can give them the pressure settings they should be able to fit new boudin tubes and mechanisims.
first things first try taking the back off and squirt some possum piss(inox,RP7,wd40) in there to free things up they might just be siezed and will work when freed up.
realy the guages are just there to tell you you jave oil and fuel pressure and not much else. i have a proper graduated oil guage on my machine 30 bucks at the local autoparts joint and some nylon tube from the hose and fitting joint and presto it works
